Kakebunn:
1,5 dl pekannøtter
1,5 dl valnøtter
1 dl dadler uten sten
1 ss kokosolje (helsekosten)
Kjør nøttene hver for seg til mel i foodprosessoren. Kjør deretter dadlene og kokosoljen til en jevn masse. Kjør så alt sammen. Trykk deigen ut i en springform med størrelse 22 cm
Skogsbærkrem:
6 dl cashewnøtter lagt i bløt i vann i 2 timer
1 dl mandelmelk
4 ss kokosolje
1 ss kakaosmør
1/2 dl agavesirup
1 ts vaniljepulver
2 ss lecitingranulat
2 ts fiberhusk
2 dl skogsbærblanding (opptint) blendes i
1 dl skogsbær som vendes forsiktig inn til slutt
Blend cashewnøttene med mandelmelk og tilsett alt det andre. Vend så i de siste bærene. Ha røren oppi formen og sett i fryseren. Når du tar den opp trenger den en time i romtemperatur for å få rett konsistens. Den holder seg i kjøleskap til dagen etter, hvis du mot formodning skulle ha rester.
Hvis mange av disse ingrediensene er ny for deg, kan jeg fortelle at de har alt sammen på helsekosten.
Flott at denne kaken var god. Har prøvd flere av Caroline Fibæk sine oppskrifter fra denne raw kake boken, men jeg langt ifra fornøyd. Da må jeg sjekke ut denne kaken, så takk for tipset. Ha en flott dag og uke ;-)
